INGREDIENTS
1tbs olive oil
1 onion chopped
1 garlic clove ,crushed and chopped
1 chicken breast
175 ml chicken stock (low salt)
200g sweet potato, peeled and diced
50g petit pois (or frozen peas)
Sauté the onion in olive oil on a pan over a medium heat until soft.
Add the crushed garlic and sauté for 1 minute.
Add the chicken breast pieces to the pan and cook for 3/4 mins
Add the chicken stock and diced sweet potato
Bring to the boil and then simmer for about 10 mins
Then, add in the peas and continue to cook for about 3 mins.
Chop, mash or purée to your desired consistency.
