Fantastic Fish Fingers

This recipe is popular with children and parents alike.

Ingredients:

300g Leftover mash potato
3 spring onions finely chopped
1 tablespoon horseradish
250g mackerel
Sprig parsley
Pepper to taste
2 tablesp flour
1 egg beaten
85g breadcrumbs
Rapeseed oil

Method:

Mix mash, spring onions, horseradish, parsley, pepper and mackerel in a bowl. Shape into fingers dip into egg then into breadcrumbs. Fry in rapeseed oil for 3 minutes each side or until golden and cooked through. Makes 10 to 12 fingers. Can be also shaped into fish cakes.
